Thanksgiving Practice

I needed to practice my cranberry sauce recipe for Thanksgiving, so I made Vegan Stuffing and squash to go with it!

The cranberry sauce contains ZERO sugar. I added apple, pineapple and honey to sweeten the sauce.

It tastes great!!

Turban Squash

What is that!??

That's what I said when I saw this squash at Easy Way. Of course I had to try it.

Just cut it in half and roast it like any other squash.

It tastes similar to spaghetti squash but has a creamy texture.

Butternut Squash

I finally cooked a butternut squash!

It's so easy to slice, scoop and bake.

I cubed half of it and mixed it with quinoa and tomatoes and used the other half for a soup!

Spaghetti squash is still my favorite winter squash, but I like butternut too.

Delicata Squash

This winter, you need to try delicata squash!

It's sometimes called sweet potato squash because it's flavor is very similar to a sweet potato.

I sautéed mine with broccoli.

Cauliflower

Cauliflower is a versatile vegetable.

You can eat it raw, roast it, steam it, mash it, or pan fry it.

I replaced chicken with cauliflower in one of my favorite Asian chicken recipes. It turned out great!

Pre-Freeze Fruits

Prepping veggies and fruits ahead of time is the the easiest way to add them to your day.

Slice and pre-freeze bananas or berries, and then store them in a freezer bag.  If you pre-freeze them, then they won't stick together in your freezer bag!

Now you can add them to your favorite shake!

A little basil from your garden can be transformed into a tasty pesto with a just few ingredients that you already have on hand.

SkinnyTaste posted this recipe that omits nuts to bring down the calories.  I was surprised that it tastes just as good as pesto with walnuts or pine nuts.
